Preserving Eggs


  • The Best Before Date is an ideal way to determine the freshness of an egg. This indicates that the eggs are Grade A quality, as long as they have been properly handled and the date has not passed.
  • Grade A eggs have a firm white, a small air cell at the wide end and a centered yolk.
  • A fresh egg will sink in water while an older egg will float. As an egg ages, the size of the air cell inside increases, causing it to float.
  • In a fresh egg, the yolk sits up high, and the white is thick and closely surrounds the yolk. An older egg has a flat yolk that breaks easily and a thin, watery white.
  • How do you tell the difference between a raw egg and a hard-cooked egg? Spin it. A hard-cooked egg spins longer than a raw egg. The liquid centre in a raw egg prevents it from building up enough momentum to keep turning.
  • A cloudy egg white is a sign of freshness, not age: the cloudiness is the of the high carbon dioxide content when the egg is laid.

How to Store and Freeze Eggs

  • Eggs should be stored in their original egg carton. The carton protects the eggs and prevents them from absorbing strong odours and flavours of other foods in the fridge through the thousands of tiny pores in the shell.
  • Keeping eggs in their carton also means the Best Before date is visible.
  • Eggs should not be stored on the refrigerator door, but in the main body of the refrigerator to ensure that they keep a consistent and cool temperature.
  • Leftover raw egg whites and yolks should be put in airtight containers and stored in the refrigerator immediately. To prevent yolks from drying out, cover them with a little cold water. Drain the water before using.
  • When storing hard-cooked eggs, you may notice a “gassy” odour in your refrigerator. The odour is caused by hydrogen sulphide, which forms when eggs are cooked. It’s harmless and usually dissipates in a few hours.

Testing for Freshness in 10 Seconds

If you are unsure of an egg’s freshness, simply put it in a bowl of water. If the egg is fresh, it will sink to the bottom and rest on its side because the air pocket in the top area of the egg is small.

A stale egg, on the contrary, will float with its large bottom end facing up because it contains more air than a fresh egg.

The occasional blood in an egg is harmless. It can be removed with a knife.

Keep your eggs nice and fresh in the fridge, in the box, to keep them away from strong smells.


Remove eggs from the fridge about 30 minutes before cooking – this allows them to come to room temperature.


Left over egg whites can be stored in a small box in the fridge for upto 1 week or frozen in plastic bags for 3 months – remember to note the quantity and date on the bag.

Left over egg yolks keep in the fridge for 2 days, make sure they’re closely covered. They don’t freeze so well though. Instead add them to mashed potato; use them to glaze pastry; or use them to bind together stuffings, meatball or burger mixtures.
