How to Store and Freeze Eggs
Testing for Freshness in 10 Seconds
If you are unsure of an egg’s freshness, simply put it in a bowl of water. If the egg is fresh, it will sink to the bottom and rest on its side because the air pocket in the top area of the egg is small.
A stale egg, on the contrary, will float with its large bottom end facing up because it contains more air than a fresh egg.
The occasional blood in an egg is harmless. It can be removed with a knife.

Left over egg whites can be stored in a small box in the fridge for upto 1 week or frozen in plastic bags for 3 months – remember to note the quantity and date on the bag.
Left over egg yolks keep in the fridge for 2 days, make sure they’re closely covered. They don’t freeze so well though. Instead add them to mashed potato; use them to glaze pastry; or use them to bind together stuffings, meatball or burger mixtures.
